Apple Cinnamon Rolls

Using the last of the apples we had picked a few weeks ago, I got into the beginning of winter baking groove and added the apples to a recipe for cardamon cinnamon rolls from the delightfully transporting “Falling Cloudberries.”

Needing a few substitutions from the pantry, I ended up using part all-purpose flour, part almond flour, and substituting soy milk for milk.  Not to mention using dry yeast, rather than the active yeast the recipe called for.  All in all, I think the subbed-in ingredients made for a slightly denser, but no less delicious, cinnamon roll.

Looking slightly Frankenstein-ish on the baking trays…

Cinnamon rolls on a blustery night are nothing short of amazing, even if they did take hours to make!  Even with the lengthy prep time, I may yet make these again, using all the ingredients the recipe calls for, and steep the milk in cardamon pods.
