Goodbye Winter, Hello Spring! (salads that is)

Dinner tonight is a mixup of winter salad meets spring salad in the form of a warm butternut squash with wild rice salad and a citrus fennel salad.  All in all – very healthy as I salute salads.

First up: Citrus Fennel Salad

A combination of Bittman’s Citrus Salad (sans vinegar) and Saffron and Honey’s fennel salad

Ingredients:

1 grapefruit, 2 blood oranges, 1 fennel bulb, juice of 2 limes, salt and pepper

Next up: A wintry Butternut Squash Wild Rice Salad – a wintry, wild butternut salad if you will (recipe pilfered from Whole Foods Salad Bar)

Ingredients:

1 butternut squash, 8 oz wild rice, 3 scallions, 1 red pepper, loads of cilantro, salt and pepper

Huzzah for blood oranges and spring!

  1. yay! happy you enjoyed the fennel in combo with bittman’s simple but delicious citrus salad. I love blood oranges. May be forced to carry around blood orange juice on me because I keep getting denied my new favorite cocktail!
